In 1989, our winery's most famous wine was born. For over 30 years, the Sauvignon Sanct Valentin has been aging in select plots on the slopes of the Mendel Mountains. The result: a complex, top-quality wine. Thanks to its seductive fruit notes, incomparable minerality, and long finish, it has always been the most important representative of the Sanct Valentin line and also one of Italy's most award-winning white wines. Harvesting and grape selection by hand begin in mid- to late September. The Sauvignon from St. Michael has crisp acidity, a smooth body, and elegant richness, making it an excellent accompaniment to fried fish such as redfish, sole, or char with a paprika cream, as well as spicy vegetable risotto
