Ham Premium
"Premium" bacon is produced exclusively from selected lean, meaty pork shanks. The raw materials are selected after stringent checking of the fat content of the shanks, the weight, the temperature, and the pH value. The shank is deboned and cut using traditional methods. The bacon is then dry-pickled and cold-smoked. By the end of the process, the meat is dried to reach a moisture content of approx. 32%.
