Speck Alto Adige PGI
Our Speck Alto Adige PGI is made exclusively from select lean and meaty pork shanks.
The raw materials are selected after stringent checking of the fat content of the shanks, the weight, the temperature, and the pH value. The shank is deboned and cut using traditional methods. Every ham is imprinted with a very legible seal indicating the date production started. This provides absolutely clear and indelible information permitting the product to be tracked all the way through its lifecycle, as well as allowing the ripening of the final product to be checked.
The bacon is then dry-pickled and cold-smoked. By the end of the process, the meat is dried to reach a moisture content of approx. 40%.
